Description

Cucumber Mango Salad is a refreshing dish combining crisp cucumbers, sweet mangoes, and a zesty lime dressing. Easy to make, it’s perfect for a light, flavorful side or a healthy meal.


Ingredients

  • 1 large cucumber, thinly sliced (Persian or English cucumber preferred)
  • 2 ripe mangoes, peeled and diced
  • 1 small red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1 lime (for juice and zest)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: Chili flakes for extra heat

Instructions

  • Prepare the ingredients: Wash and thinly slice the cucumber. Peel and dice the mangoes into bite-sized pieces. Finely dice the red onion and chop the cilantro and mint.
  • Make the dressing: In a small bowl, whisk together the lime juice, olive oil, honey, and a pinch of salt and pepper. Add chili flakes if you prefer some heat.
  • Mix the salad: In a large mixing bowl, combine the cucumber, mango, red onion, cilantro, and mint. Drizzle the dressing over the salad and toss gently to combine.
  • Serve: Let the salad rest for 10 minutes to allow the flavors to meld. Garnish with lime zest and serve chilled.

Notes

For extra crunch, sprinkle toasted pumpkin seeds or chopped nuts on top of the Cucumber Mango Salad just before serving. This adds texture and enhances the flavor!
