Perfect as a side or a light main course, it’s easy to customize with protein options and your favorite herbs.

Ingredients

Scale
  • 1 package (about 20 oz) cheese or meat-filled tortellini
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 cucumber, sliced
  • 1/2 cup black or green olives, pitted and halved

  • Prepare Vegetables: In a large bowl, combine cherry tomatoes, diced bell peppers, sliced cucumbers, olives, and red onions.
  • Mix Together: Add the cooked tortellini to the vegetables and gently toss.
  • Add Dressing: Drizzle Italian vinaigrette over the salad and toss until evenly coated.
  • Season: Season with salt and pepper, adjusting the amount of dressing if needed.
  • Chill: Refrigerate the salad for at least 30 minutes to allow the flavors to blend.
