Description

Fu Bao Chinese Tofu Salad is a refreshing, healthy dish made with firm tofu, crisp vegetables like cucumbers and bell peppers, and a savory sesame-soy dressing. Perfect as a light meal or side, it offers a delicious blend of flavors and textures.


Ingredients

  • 1 block firm tofu (cubed)
  • 1 cucumber (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 carrot (shredded or julienned)
  • 2 green onions (thinly sliced)
  • 2 tablespoons soy sauce (low-sodium if preferred)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 garlic clove (minced)
  • 1 teaspoon fresh ginger (minced)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  • Prepare the Tofu:
    Drain and press the tofu to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes. Set aside.
  • Chop the Vegetables:
    Thinly slice the cucumber, bell peppers, and green onions. Shred or julienne the carrot. Set the vegetables aside for assembly.
  • Make the Dressing:
    In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, and ginger until well combined.
  • Toss the Salad:
    In a large mixing bowl, combine the tofu and prepared vegetables. Pour the dressing over the salad and gently toss until everything is coated evenly.
  • Garnish and Serve:
    Transfer the salad to a serving dish and sprinkle with sesame seeds, fresh cilantro, and optional chili flakes for a spicy kick. Serve immediately and enjoy!

Notes
