Description

A vibrant and flavorful Southwest Chicken Salad packed with grilled chicken, black beans, corn, avocado, and crisp veggies, all tossed in a zesty lime dressing. Perfect for a fresh and healthy meal!

Chicken Marinade:

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt, to taste

Salad Ingredients:

  • 4 cups romaine lettuce (or mixed greens), chopped
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh or roasted)
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped

Dressing:

  • 1/4 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt, to taste

Optional Toppings:

  • Shredded cheddar or cotija cheese
  • Crushed tortilla chips
  • Jalapeños, sliced
  • Fresh cilantro, for garnish

Instructions

1. Marinate the Chicken

  • In a bowl, whisk together olive oil, lime juice, cumin, chili powder, garlic powder, and salt.
  • Coat the chicken breasts in the marinade and let sit for 30 minutes to 2 hours in the fridge.

2. Grill the Chicken

  • Preheat the grill to medium-high heat.
  • Grill the marinated chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for a few minutes, then slice into strips.

3. Prepare the Salad

  • In a large bowl, combine the chopped lettuce, black beans, corn, avocado, bell pepper, and red onion.
  • Add the sliced grilled chicken to the bowl and toss everything gently.

4. Make the Dressing

  • In a small bowl, whisk together the Greek yogurt, lime juice, olive oil, and salt.
  • Drizzle the dressing over the salad and toss gently to coat.

5. Add Toppings & Serve

  • Top with shredded cheese, crushed tortilla chips, and jalapeños, if desired.
  • Garnish with extra cilantro and serve immediately.
