    • 12 scotch bonnet peppers (for heat)
    • 23 cloves garlic, minced
    • 12 teaspoons ginger, grated
    • 2 tablespoons soy sauce
    • 1 tablespoon brown sugar
    • Salt and pepper to taste

For the Salad Base:

  • 4 cups mixed greens (e.g., romaine, spinach)
  • 1 cup cherry or grape tomatoes, chopped
  • 1 medium cucumber, sliced or diced
  • 1 cup diced bell peppers (red, yellow, or orange)
  • ½ small red onion, thinly sliced
  • 1 avocado, diced

For the Dressing:

  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped

Instructions

  • Marinate the Chicken: Combine all jerk marinade ingredients in a bowl. Add chicken, ensuring it’s well-coated. Marinate in the refrigerator for at least 1 hour (preferably overnight).
  • Cook the Chicken: Preheat the grill or oven. Grill chicken over medium-high heat for 6-7 minutes per side, or bake at 400°F (200°C) for 20-25 minutes until fully cooked.
  • Prepare the Salad Base: While the chicken cooks, wash and chop the mixed greens, tomatoes, cucumber, bell peppers, red onion, and avocado. Combine them in a large salad bowl.
  • Make the Dressing: In a bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, pepper, and cilantro.
