- 1–2 teaspoons ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar

For the Salad Base:
- 4 cups mixed greens (e.g., romaine, spinach)
- 1 cup cherry or grape tomatoes, chopped
- 1 medium cucumber, sliced or diced
- 1 cup diced bell peppers (red, yellow, or orange)
- ½ small red onion, thinly sliced
- 1 avocado, diced
For the Dressing:
- ¼ cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped
Instructions
- Marinate the Chicken: Combine all jerk marinade ingredients in a bowl. Add chicken, ensuring it’s well-coated. Marinate in the refrigerator for at least 1 hour (preferably overnight).
- Cook the Chicken: Preheat the grill or oven. Grill chicken over medium-high heat for 6-7 minutes per side, or bake at 400°F (200°C) for 20-25 minutes until fully cooked.
- Prepare the Salad Base: While the chicken cooks, wash and chop the mixed greens, tomatoes, cucumber, bell peppers, red onion, and avocado. Combine them in a large salad bowl.
- Make the Dressing: In a bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, pepper, and cilantro.
- Assemble the Salad: Once the chicken is cooked, let it rest for a few minutes before slicing it. Add the chicken to the salad bowl, drizzle with dressing, and toss gently.
